Eating out in Poland: history, status, perspectives and trends

Abstract

The aim of the paper is to provide an overview on major changes that took place in the foodservice market in Poland before and after the economic transition, to discuss the current state of the sector and identify directions for further development. The article presents consumer foodservice market trends in Poland and main trends conditioning its further development and transformation. In Poland, after the economic transformation of 1989 significant quantitative and qualitative changes in the services sector were observed, including foodservice industry. Most foodservice outlets were privatized, there was a rise of new establishments and qualitative changes in their organization. As a result the Polish foodservice market became similar to western markets. Demographic, socio-cultural and economic trends which affected consumers' needs and changed their expectations towards market offer had also a stimulatory effect on the foodservice market transformation. Now Polish foodservice market is still growing, although at a weaker rate than in previous years. Strong demand favors this growth. Rapid development of tourism, expansion of tourist accommodation and the development of business infrastructure are driving also foodservice sector development.
